Dehydrated food might be a partial answer; however, you should have plenty of regular canned goods on hand and rotate your stock.
Imagine living in a post SHTF scenario and trying to cope with the stresses and strains of getting by and defending yourself AND living off of food that tastes something like cardboard and tv dinners.
There are a lot of normal foods that have a shelf life of six months, a year, or maybe longer. Personally, I buy in bulk or while stuff is on sale, stack it deep and rotate my stock every week so that the family is eating the oldest items first. I know in warehouse terminology, it's referred to as FIFO... First In First Out.
Just a thought here... and remember I am a MOM here...
Vitamins can be very important in a post SHTF scenario - especially if you have children. Rember we don't know what kind of situation you might be in. If you are in a bunker situation, lack of sunlight creates deficiencies, vitamins can help here - especially growing children. A lot can happen to a small child if you have enough food for a year, but they don't get the nutritional balance of vitamins they need.
Just thinking out loud.
